This coffee is grown between 1,200 to 1,300 meters above sea level. It is a blend of the varieties from our farm. The coffee plantation has a view of one of the most famous mountains in Nicaragua, the Peñas Blancas Massif, so it has a privileged microclimate to grow. This coffee is produced by the Montes Family, third and fourth generation producers.
The process
Honey Fermentation
The coffee is harvested at its maximum point of ripeness and then allowed to rest for 24 hours in cherry, pulped and fermented for 48 to 72 hours depending on the temperature in an environment with little oxygen, then it is dried directly in the sun for 72 hours with all the mucilage and then finish its drying process in the shade and prevent the temperature from exceeding 40 C, it is left to rest for two months and then be threshed and packaged.
